Indulge in the ultimate comfort dessert with this luxurious sticky date pudding recipe. Rich, moist, and topped with a silky caramel sauce, this showstopper is perfect for cosy evenings at home. Method:

For the Caramel Sauce:

1.     Place the sugar and water in a large, sided saucepan, mix slightly to allow all the sugar to start to dissolve, place on a medium high heat, the mixture will start to bubble and cook out until the water has evaporated, once this has happened you will see the colour start to change, place onto a medium heat now, and watch the colour change, when all of the caramel is the desired darkness, add in the butter while whisking out, keeping the pan off the heat if necessary.

2.     Once the butter is mixed through, slowly add the cream while whisking. (it is best to keep the cream out at room temperature before adding to avoid it bubbling up)

3.     Remove from the heat and allow to cool slightly, season with a pinch of sea salt.

 

For the Pudding:

1.     First place the dates, water, salt and butter into a saucepan. Cook out on a medium heat until reduced down and the dates form a loose puree. Leave to cool for 5 minutes.

2.     While the mix is cooling down, Sieve the self-raising flour, bicarb and baking powder in a suitable sized bowl.

3.     Whisk the egg and caster sugar until light and pale and slightly doubled in volume

4.     Once the date mixture has cooled, combine with the eggs and sugar, then combine that with the flour mixture.

5.     Place into a suitable sized tin (2 lb loaf tin works well, or a small square or circle baking tin) making sure it is lined with greaseproof paper first.

6.     Place your tin into the Bertha on a higher shelf for 25-35 minutes or until a skewer test comes out clean.

7.     Remove from the oven and allow to cool before portioning, or if serving whole pour 1/3 of your caramel sauce over the pudding, stabbing a few holes in the top while it is cooling down.
