Lisa Goodwin-Allen's The America’s World Cup Burger

METHOD

 

For the Burger:

 

1.     When making burger patties using good quality mince makes a massive difference, speak to your local butcher for their recommendations, you need a minimum of 20% fat in your burger. If you would like a blend like we do for a deeper flavour, then ask your butcher to mince them at the same time.

2.     Double mincing will give your burger patty a softer texture you can do this at home if you have a hand mincer or an attachment for a mixer like kitchen aid. Equally you can ask you butcher to do this for you.

3.     Hand dice the marrowbone and fold into your burger mix.

4.     Season your patty mix with salt and pepper and weigh to 200g patties and refrigerate until needed.

 

For the Sauce:

 

1.     For the jalapeno mayo chop the pickled jalapenos and mix with the mayonnaise, add sriracha sauce to taste adding more if needed season with salt pepper and lime juice if needed.

 

Cooking and assembly:

 

Once ready to cook place your patties over the direct heat and cook until seared on each side and cook until cooked through, adding the streaky bacon and cheese for the last part of the cooking.

Toast your bun over the direct heat and build your burger by spreading the jalapeños may on each bun, adding the tomato lettuce and gherkins to the bun and finally your patty on top.
